I was never really a big fan of quinoa; you have to really know how to prepare it for it to come out right; but that was until I met Glenda from Quinoa Corner thanks to eatingwithlittlemariii.
A former paralegal who gave up her career decided to chase her dream and open up her own restaurant. You can taste the love and the fresh ingredients Glenda uses to put together each recipe of perfection! And talk about local love; Glenda is able to produce all these quinoa related recipes because she buys in bulk from local farmers markets! She actually gets ALL her ingredients from said farmers markets, so you know those meals are going to be great with some of the freshest and best ingredients possible!
Speaking of love, I am absolutely in LOVE with Glenda. She has the biggest heart and was actually one of my sponsors for my 24 Hour Run For St Judes event; she came through big with a her “Special Fried Quinoa” & her “Quinoa Con Pollo” meals. Everyone that attended the event said they loved the food and I can assure you, you will too!
I started meal prepping with Glenda recently and you definitely get more bang for your buck. On average I’m paying $9/meal for a whole week of food (both lunch and dinner)! And what I love even more is that her store is literally located on the corner of a strip mall in Hialeah! And all the decor you see laid out in the store were handcrafted by her and her husband! How cool is that?!
